What’s game day without pizza? This delicious take on a traditional pie is a real crowd-pleaser. Score one for flavor.
1-3/4 lbs. chicken breast
2 medium red onions, sliced
1/2 cup BBQ sauce (plus extra for drizzling)
2-1/2 lbs. pre-made pizza dough (or pre-made crust, if preferred)
2 cups white cheddar cheese, shredded
1-1/4 cups Sabra® Classic Hummus
1/2 cup cilantro, chopped (optional)
Add chicken breast, onions and BBQ sauce to a slow cooker. (You can substitute packaged pulled chicken if you prefer.)
Cook on HIGH until chicken reaches 165° in center, 3 to 4 hours depending on thickness of chicken breasts. Remove to cutting board and shred with fork.
Reserve 1-1/2 cups of chicken for the pizza.
To make the pizza, preheat grill to medium and oil the grill grates.
Roll out pizza dough into desired thickness and shape. Place on grill and cook until bottom is lightly browned, 3 to 5 min. NOTE: Keep an eye on crust to avoid burning. Use a pizza peel to flip. Cook until crust is lightly browned and cooked through, abou
Remove to pizza peel and carefully spread Sabra Hummus on the dough, just as you would tomato sauce.
Top with pulled chicken with onions and cheese.
Turn off center burners and place back on the grill. Cook just until cheese is melted, about 2 to 3 min.
Remove from grill and top with cilantro. Drizzle with additional BBQ sauce, if desired. Slice and enjoy.
