Breakfast Waffle Bar

Having waffles for breakfast may not be a new concept, but turning them into a breakfast sandwich definitely is. This is a fun way to make brunch a little more memorable – and a lot more delicious.
In medium bowl, beat eggs, milk, salt and pepper with fork until well combined. Set aside.
In small nonstick skillet, cook sausage according to package. Remove and set aside. Wipe skillet with paper towel
Pour egg mixture into same skillet. Cook over medium heat until mixture begins to set on bottom and around edges.
With spatula, continue to fold and cook eggs for 2 to 3 min., or until cooked through.
Toast waffles according to package. Top each with one sausage link and egg mixture. Sprinkle with cheese. Fold in half. Serve with salsa.
