1 cup Wellsley Farms Signature Collection Exotic Fruit and Almond Blend, coarsely chopped
1/4 cup Wellsley Farms Honey
1/4 cup Chocolate Chips (optional)
With a sturdy wooden spoon, stir together all ingredients in a large bowl until well blended. Refrigerate at least one hour.
Spray a mini muffin pan with cooking spray. Spoon 1 Tbsp. of mixture into each cup.
Freeze 3 hours, then remove from pan. (If energy bites stick, place bottom of pan in warm water for 1 min. to loosen.) Transfer to re-sealable freezer bag.
Let thaw to eat. Energy bites can be stored in the refrigerator up to one week or frozen for up to 2 months.

Blueberry Almond - Substitute Almond Butter for Peanut Butter, 3/4 c. Wellsley Farms Dried Blueberries and 1/2 c. Wellsley Farms Sliced Almonds for Fruit and Nut Blend and add a dash of cinnamon.
Dark Chocolate Cherry - Substitute Wellsley Farms Dark Chocolate Cherry Trail Mix for Fruit and Nut Blend and add 1 Tbsp. cocoa powder.
Maple Walnut - Substitute 1/4 c. Almond Butter for Peanut Butter, 1 c.Wellsley Farms Walnuts and 1/3 c. Wellsley Farms pitted dates (chopped) in place of the Fruit and Nut Blend and 1/3 cup maple syrup for the honey.
