Skillet Cherry Cobbler
Makes 8 Servings • Hands-On Time: 15 Min. • Total Time: 40 Min.
Preheat oven to 400.°
Combine cherries, 1 cup of sugar, corn starch and lemon juice in a seasoned cast iron skillet. Dot top with 2 Tbsp. of butter and set aside.
Combine baking mix with 1 Tbsp. of butter and milk in a mixing bowl. Stir with a wooden spoon until just combined. (Do not overmix.)
Drop by spoonful over the top of the cherry mixture, covering evenly but not completely. (Cobbler topping will spread during cooking.)
Bake until filling is hot and bubbling and the cobbler topping is a rich, golden brown — about 25 min.
Cool on wire rack for 10 min. Serve hot with vanilla ice cream or whipped cream.
