What You Need:
1 cup Heavy Cream
1 tsp. Pure Vanilla Extract
2 Tbsp. Cane Sugar
½ cup Cream Cheese, softened
6 Clementines, peeled, sectioned
½ Pineapple, peeled, cored and chopped
½ cup Maraschino Cherries, drained
½ cup sweetened coconut flakes
½ cup Walnuts, toasted (optional)
- Beat cream, vanilla and sugar in chilled metal mixing bowl with electric mixer on medium just until soft peaks form. Do not over-beat.
- Mix ¼ cup of whipped cream with cream cheese in small bowl. Gently fold mixture back into whipped cream using rubber spatula until just combined.
- A little at a time, gently fold in fruit, coconut and nuts (if using).
- Serve in dessert bowls. Or try on slices of Angel Food Cake.
