Chopped Tomato and Onion Salad
What You Need:
2 medium Red Onions, thinly sliced and quartered
¼ cup Lemon juice (½ large lemon)
½ cup Rozzano Extra Virgin Olive Oil
½ tsp. Salt
½ tsp. McCormick Ground Black Pepper
1 (xx oz.) pkg. Splendido Tomatoes, halved
1 Seedless Cucumber, halved and thinly sliced
½ cup President Crumbled Feta
½ cup Keepos Kalamata Olives (optional)
- Soak onion slices in ice water for ½ hour. Drain well, then spin or blot on paper towels to dry.
- In a large mixing cup or small bowl, whisk together the lemon juice, olive oil, salt and pepper.
- Pour the dressing into a large salad bowl along with the onions, tomato halves and cucumber slices. Toss gently to combine.
- Divide equally and arrange on 8 salad plates. Serve immediately topped with feta and olives (if using).
