Whole Grain Penne With Broccoli, Garlic & Lemon
What You Need:
8 oz. Whole Grain Penne
5 cups fresh Broccoli Florets
½ cup Extra Virgin Olive Oil
10 Garlic cloves, minced
½ cup Low-Sodium Chicken Broth
Grated zest of 1 lemon
Salt and freshly ground pepper
¼ cup Parmesan cheese
- Bring large pot of salted boiling water to boil. Add penne and cook 5 minutes.
- Add broccoli and cook 4 more minutes until both are al dente. Drain and set aside.
- While penne and broccoli are cooking, heat oil in a large non-stick skillet over medium heat. When hot, add garlic and sauté, stirring constantly to prevent burning, about 1 minute.
- Add broth and raise heat to medium-high. Bring to a boil and cook 5 minutes, stirring constantly, until reduced by about ⅓. Remove from heat and add pasta, broccoli and lemon zest, tossing to coat. Add pepper and salt to taste. Top with freshly shredded parmesan cheese and serve immediately.
