Mediterranean – Style Tilapia
What You Need:
6 fresh Tilapia Fillets
4 Tbsp. Olive Oil, divided
2 cloves Garlic, minced
1 bunch Green Onions, thinly sliced
24 oz. Cherry Tomatoes, halved
1 cup sliced Pitted Kalamata Olives
1 tsp. Crushed Red Pepper Flakes
- Heat 2 Tbsp. oil in skillet over medium-high heat. Pat tilapia dry and season with a few grinds salt and pepper.
- Add half of fillets to skillet. Cook 2 minutes.
Flip and cook 2 more minutes. Remove to
warm, foil-covered platter. Repeat with remaining fillets, then set fish aside.
- Add remaining 2 Tbsp. of oil to pan and sauté garlic, green onions, tomatoes, olives and pepper flakes 4 minutes. Taste and adjust seasoning.
- Spoon over fish on platter. Serve immediately with Artisan Bread and a green salad.
