Organic Orange Pecan Rice Salad (Gluten-Free)
What You Need:
1 cup Tru Roots Organic Sprouted Rice Blend
¼ cup freshly squeezed Organic Naval Orange juice (about ½ orange)
½ tsp. grated Organic Naval Orange zest
2 Tbsp. Wellsley Farms Organic Extra Virgin Olive Oil
¼ tsp. Morton’s Sea Salt
2 Organic Naval Oranges, sectioned
2 Organic Celery Hearts, diced (about ½ cup)
½ cup chopped Wellsley Farms Pecans
1 Scallion, chopped
- Cook sprouted rice blend according to package directions. Cool to room temperature.
- In a medium bowl, whisk together orange juice, orange zest, olive oil and salt.
- Add cooled rice to dressing in bowl along with orange sections, celery, pecans and scallions. Toss gently until everything is combined.
- Cover and refrigerate at least 1 hour. Serve chilled.
