Taco Casserole

Makes 6 servings
PREP: 10 min. COOK: 20 min.

What You Need:

1½ lb. Lean Ground Beef or Ground Turkey (choose one)
3 Tbsp. Taco Seasoning Mix
1 can (15.5 oz.) Kidney Beans, drained and rinsed
1 can (15 oz.) Tomato Sauce
1 can (11 oz.) Whole Kernel Corn, drained
1 cup Shredded Cheddar Cheese (approx. ¼ lb. or 4 oz.)
1 cup coarsely crushed Tortilla Chips
Assorted toppings: Sour Cream, sliced Green Onions, shredded Iceberg Lettuce, chopped fresh Tomatoes, etc.

Make It:

  1. PREHEAT oven to 400°. Brown meat in large skillet on medium-high. Drain fat.
  2. STIR in Taco Seasoning Mix, beans, tomato sauce and corn. Bring to a boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-qt. baking dish. Sprinkle with cheese and tortilla chips.
  3. BAKE 5 to 10 minutes or until cheese is melted. Serve immediately. Provide desired toppings alongside in small bowls.
